Lemon Herb Salmon with Quinoa and Roasted Vegetables

Ingredients:
Salmon -
2 wild-caught salmon filets
1 tbsp olive oil
juice of 1/2 a lemon
2 cloves of garlic, minced
1 tsp dried oregano or Italian seasoning
Salt and pepper to taste
Quinoa -
1 cup quinoa
2 cups water or broth
pinch of sea salt
Roasted vegetables -
1 cup broccoli florets
1 cup zucchini slices
1 bell pepper, chopped
1 tbsp olive oil
salt and pepper to taste, optional paprika
Instructions:
Cook quinoa: rinse quinoa and combine with water/broth and salt. Bring to a boil then simmer covered for 15 minutes until fluffy.
Roast vegetables: toss vegetables with olive oil and seasonings. Roast at 400 degrees for 20-25 minutes.
Prepare salmon: Place salmon on a baking sheet. Drizzle with olive oil, lemon juice, garlic and herbs. Bake at 400 degrees for 12-15 minutes until flaky.
Serve salmon over roasted vegetables and quinoa. Optional: top with fresh parsley or extra lemon.
